NEW MAKE JUNIPER SPIRIT: GIN, BUT NOT GIN
And this new make spirit of ours is a perfect example of that.
New make is a distillate that's normally distilled, put into a barrel, and left for three years to become Scotch whisky. We bought this distillate before it went into a barrel, and then we processed it our way. We loaded it into a still with juniper, mulberries, and dried apricots, distilled it, and then let it rest for a month in a glass demijohn with cherry wood chips. Just so it gets a little something from the barrel, you know?
The result? It tastes like gin. It has the character of gin. But legally, it's a spirit, because the base is whisky distillate, and by law, that doesn't make it gin. We call it New make Juniper Spirit, and it's incredibly good. Think of it as a whisky soul in a gin body.
So much for our whisky making, then. We took its base and turned it into something purely homemade, uniquely ours, and absolutely delicious!
