This distillate was created as a tribute to the whiskey community and the atmosphere of Prague Spirit Fest. Instead of our classic great grain distillate, this time we went for a whiskey base - a new make spirit from The Borders Distillery.
New make is a clear, unripened distillate directly from the boilers, which carries the raw character of the future whiskey. In this case, it is a lively, fruity-flavored distillate from barley, distilled in traditional boilers. It is its grainy fullness and fresh fruitiness that have given us the space to create a gin that is different from our regular produce.
In taste, it stands firmly on the distinctive juniper. We added dried apricots and mulberries to the botanicals, which give the gin a delicate fruity sweetness, roundness and a slightly honey tone. In addition, we let the finished distillate rest for a month in a glass demijon together with cubes from a silk barrel. Thanks to this, it has acquired a subtle woody touch, a deeper texture and an elegant finish.
The result is a gin on the border of two worlds - juniper, fruity and full, with the character of whisky new make spirit in the background. Limited edition for those looking for something really unusual.
Only 130 bottles were produced.
Great clean on an ice cube, but also works great in a minimalist G&T with a neutral tonic, where juniper, fruit and a delicate woody tone stand out.
